Vinification: Spontaneous fermentation. 6 hours of skin contact. Metodo classico spumante. Dosage with indigenous yeast.
Aging / Finishing: 5 years on lees before disgorgement. Unfined/unfiltered.
Total Sulphur: under 40 mg/L
